Sweet Potato and Mushroom Burger with a Creamy Chipotle Sauce

Our friend @naturally.sassy shares this easy vegetarian dinner idea, perfect when cooking for a crowd and can even be made in advance and frozen to help you save on time.

  • 3 large sweet potatoes

    2 tins black beans

    1 punnet of mushrooms

    2 red onions

    2 tsp cumin

    2 tsp oregano

    1 tsp chilli powder

    100g Oatcakes (you can also use oats, or regular breadcrumbs)

    1 ½ cups cashews

    ½ cup water

    2 teaspoons harissa paste

    Juice of 1 Lemon

  • Step 1: If using an electric AGA, start by turning on your roasting oven to R6. If using a traditional aga, you will be using the roasting oven for this recipe.

    Step 2: Peel the sweet potatoes, chop them up and place on a lined roasting tray. Drizzle with olive oil and season with a generous pinch of salt. Cook for around 45 minutes.

    Step 3: Chop the mushrooms. Slice them lengthway and then turn the mushroom around and slice in the opposite direction, until each mushroom is chopped into 10-12 small pieces. Mince the red onion.

    Step 4: On the AGA add a frying pan and a splash of Olive Oil. Start by cooking the red onion, stirring until browned and softened. Transfer the onions to a bowl and leave to cool. In the same pan add the mushrooms and a further drizzle of olive oil, stir over a high heat until well cooked. Add in 2 cloves of crushed garlic for the final few minutes. Take off the heat.

    Step 5: Once the sweet potatoes are cooked, place to the side to let cool. Once cool add into a food processor with the black beans, and spices: cumin, oregano and chilli powder. Blend until it starts to smooth, stopping before it’s a complete puree and still has some texture. Spoon the mixture into a bowl.

    Step 6: Make the oatcake breadcrumbs. Add the oatcakes into a blender and blend until it’s a breadcrumb consistency. Pour into the mixing bowl with the burger mix and combine well using your hands.

    Step 7: Shape the mix into approx 8 burgers. Add a touch of olive oil to your pan and cook the burgers for 3 minutes on each side. Place on a baking tray and into the AGA for 10-15 minutes as you complete the rest of the burgers.

    Step 8: While the Burgers are in the oven let’s make the Harissa sauce. Add all of the ingredients into your blender and blend until smooth.

    Step 9: To compile the burgers, get your favourite burger bun and fillers (tomatoes, lettuce, avocado etc). Add the burger into your bun, stack with your favourite toppings and a spoonful of our harissa sauce. Serve up!
